Chef Jodi’s Peach Crisp with Vanilla-Goat Cheese Cheese Mouse

Half Recipe

You can serve this in individual ramekins or in large baking dish! Its up to you! Feel free to use any fresh fruit you like, nectarines and some berries or a berry crisp all so delicious!

Filling

  • 5 peaches, cut into small bite sized pieces
  • 1 lemon, zest and juiced
  • 2 Tablespoons sugar
  • 2  Tablespoons Carnstarch

Topping

  • ¼ and 2 Tablespoons cup flour
  • ¼  cup rolled oats
  • ¼  cup sliced almonds
  • ¼  teaspoon baking powder
  • pinch of salt
  • 2 Tablespoons and 2 teaspoons brown sugar, packed
  • 2 ounces unsalted, soften butter cut into cubes

Mousse

  • 4 ounces light cream cheese, soften
  • 2 ounces goat cheese, soften
  • 2 Tablespoons cup granulated sugar
  • ½ Tablespoon milk
  • ½ vanilla bean, split and seed scraped
  • 1/2 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees

In a large bowl toss berries together.  Add ½ cup brown sugar, lemon juice and zest flour and gently toss to combine. Transfer to 9-inch baking dish or 6, 4-inch ramekins.

Make the topping: In a large bowl, combine flour, oats, almonds, sugar, baking powder and salt. Using a pastry knife cut in cubes of butter.  Toss all ingredients until you have a crumble.

Sprinkle topping evenly over berries and bake for 30 – 40 minutes until top is brown and bubbling. Transfer to wire rack and let cool about 30 minutes

Make the mousse: In a large bowl add soften cream cheese, goat cheese, sugar, vanilla seeds and extract. Using a hand mixer, beat all ingredients and add milk until light and airy. Cover bowl and refrigerate. Serve on top of berry crisp
