Chef Jodi’s Stir Fried Cauliflower Rice

I buy the bags of cauliflower rice from Trader Joe’s but you can certainly take a fresh cauliflower and grind in a food processor! And use an assortment of fresh veggies of your choice.

Ingredients

  • 2 Tablespoons vegetable oil
  • 5 green onions, sliced
  • 2 teaspoons fresh garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup, snow peas
  • 1 cup  celery, chopped
  • 1 cup bean sprouts
  • 3 cups cauliflower rice
  • 2 Tablespoons soy sauce
  • 1 egg

Directions

Too make your own cauliflower rice, Rinse cauliflower and dry. Cut into florets and pulse in your food processor until rice consistency. Store in plastic container until ready to use.

In a large sauté pan heat oil. Add green onions and garlic and sauté a couple of minutes. Add other veggies and sauté for a few minutes. Add cauliflower rice and soy sauce and sauté until rice is soft and tender. Make a hole in the middle of the pan, add egg and scramble. 

If you like spicy you can add sriracha sauce or pepper. 

Serve warm.
